Tea drinking and serving holds a significant value among Asians most especially the Chinese and Japanese people. It has been widely practiced for more than 2000 years. Tea is a major element for every ceremony and rituals in their culture. It expresses a sense of courtesy, decency, peace and elegance. One well known tea-brewing process is the kung fu tea. Usually, kung fu is generally regarded as a form of martial art. However, among the Chinese and Japanese people, kung fu also means hard labor, success, skill and free time. It also expresses appreciation, art, and brewing technique.

This kind of tea is well known in the Fujian area as well as the Guangdong Province. There are many versions of brewing this tea. Usually, it is done by brewing spring water in a cauldron fire pit or grates. When the water boils, Wuyi tea is stirred in the water. Afterwards, warm water should be poured over the teapot. This is to bring out the aroma and quality of the tea. Another type of leaf used for a kung fu tea is the wu long. It is known not only for its aroma and flavor but also for its medicinal properties.

There are various ways to prepare the tea and doing it inappropriately could result to a less than perfect aroma and flavor. There are several techniques to be used such as high-pour or pouring the water from an elevated level, low-pour or pouring the tea to a low level, using the pot lid to brush off the foam made by the tea and cleansing the pot lid with lukewarm water.

Kung fu has a naturally strong taste. When using tea leaves, it is usually a matter of preference. For the first time drinkers, a few leaves should be enough though it still tastes bitter. On the other hand, those who drink this tea for a long time are more able to tolerate the bitter taste of the leaves. In fact, they may also prefer using more of the leaves.

The tea sets as well play a significant role in the drinking and serving procedure. This is because tea drinking not only serves as a pastime, but rather a special social activity shared by several people and brings the spirit of friendship and harmony. If there are guests in a Chinese or Japanese household, this is the common way to greet them and show hospitality. The tea sets are commonly made up of small, delicate cups and a cast iron tea pot or also known as tetsubin. This type of kettle has a different design compared to the regular Western teapots. The designs are often more intricate and artistic. The tea pot and cups are placed on a cast iron griddle when serving.

The traditional essence of kung fu tea drinking among the Chinese and Japanese still continues today. The development of their tea ceremonies may slightly modify during the course of the years but still, the spirit and purpose remains the same.
